Macaroni and Cheese Casserole Recipe

One of my families favorite recipes is homemade macaroni and cheese casserole.  I received this recipe from my mother in law.  Not only is it yummy but it is very easy to make.  I am hoping to teach my daughter to make it this year, okay every part except the part about the over.  Here is the recipe:

Macaroni and Cheese Casserole


  • 2 cups uncooked Macaroni Noodles
  • 4 tbsp butter
  • 1 1/2 cup of Extra Sharp Cheese, shredded
  • 1 tsp Salt
  • 1/4 tsp Pepper
  • 2 Eggs
  • 2-3 cups Milk
  • Paprika on top


  1. Preheat oven to 350 degrees.
  2. Layer:  Half of the Macaroni, half of the Butter and half of the Cheese in a casserole dish.
  3. Repeat these layers one more time.
  4. In a separate bowl mix the Salt, Pepper, Eggs and Milk together well.
  5. Pour over top of the layers.
  6. Sprinkle with Paprika. (this is what gives it the beautiful brown color on top)
  7. Bake for 50 minutes at 350 degrees.
  8. Once done, let sit for 10 minutes before serving.
  9. Enjoy.


  • I like to shred our own cheese, it will save you money.  We use the Cabot Extra Sharp cheese.  That is our preference, I have never tried any other cheddar cheese.
  • We decided the next time I make this, to cut the butter back to 3 tbsp.  It is a bit greasy with 4 tbsp, but not heart attack level.  I just do not know if it will affect the recipe or not.  I will try to update my blog when I make it again.
  • I find I always need 3 cups of Milk.  I just make sure I use enough milk to almost cover the noodles, otherwise you get uncooked, hard noodles at top of casserole.
  • If it look really wet at the 50 minute of baking mark, leave it in until it looks like it isn’t overly wet.  This will come with practice.  No easy way to describe it.
